Best of Kelowna - Silver Award - Best Steak

A huge congratulations to our counterparts upstairs at the Modest Butcher Kitchen + Market for their silver medal in the Best Steak in Kelowna category! A considerable achievement after just one (extremely unpredictable) year in operation. Thank you to all our fantastic friends and guests who took the time to vote and support us over this last year. You are all indeed the most important and rewarding part of our business!

We'd also like to give a massive shoutout to the other nominees in the Best Steak category, and of course, The Keg Steakhouse for their win in this category. We feel very fortunate to be in a community with such skilled peers!

The Modest Butcher Steak Program

When we first sat down as a team to discuss the concept for our new restaurant just under two years ago, one item kept popping up: steak. But, not just any steak, we wanted only the best quality beef, raised under ethical standards, and sourced from within a 'reasonable radius.'

Our focus was set. Talented Chef Dan Carkner set out to find producers and suppliers that matched our standards and choose the best cuts for our future steak program. Our chosen meat comes from farms all over BC and Alberta and occasionally just south of the border in Washington’s North Okanogan region (only 2 hrs away!).

Chef Dan trains and directs his team to appreciate and work with the natural flavours within the meat as well as where it comes from. Using our dry-aging steak locker, which you can find in the market space, the team dry-age tomahawks for up to 10 days (on top of 28 days wet aging). Some cuts have spent up to 80 days in there, completely transforming the product. With natural enzymes at work this process creates a more concentrated, beefy flavour. Once on the grill, Chef Dan keeps things simple with minimal seasoning and classic sauces, specifically chosen to suit each cut of meat.

The Modest Butcher Kitchen + Market steak program is constantly developing. We recently launched a Steak-to-Go program offering customers a selection of our most popular cuts so you can show off your own grill master skills. Available for pre-order online for pick up the following day they’re perfect for the upcoming summer BBQ season! And, just in time for Father's Day, we are offering Tomahawk meal kits. These include not just our most popular steak, but all the fixins' you know and love that are enjoyed with it at the restaurant. Grill the steak, reheat the side dishes, and take all the credit!
